Pumpkin Cake

Pumpkin Cake
INGREDIENTS:
� 2 cups shredded raw pumpkin
� 3 eggs
� 1 3/4 cups sugar
� 1 cup vegetable oil
� 2 cups flour
� 1/4 teaspoon baking powder
� 2 teaspoons baking soda
� 2 teaspoons cinnamon
� 1 teaspoon salt
� 2 teaspoons vanilla
� 1 cup chopped walnuts (optional)
PREPARATION:
Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and walnuts. Mix together by hand.

I love cream cheese icing on this

I agree, cream cheese icing rocks.

I am not exactly Matha Stewart here, so I don't do a lot of digging in pumkins and food processing. I am sure it is not as good as fresh pumpkin, but I have used canned pumkin and it got great reviews. I also add almonds instead of walnuts (personal preference).

What do you recommend for temp and cooking time?

I do mine at 350 for 40min.

Boy what a ding bat I am!!!! So Sorry guess I forgot to type that part. I couldn't do a cut and paste as I was getting off my recipe card. What the heck, if you don't want raw cake, cook at; 350 for 55-60 minutes toothpick inserted should come out clean. I use a bundt cake pan or you can use a 13x9x2 greased and floured.

Y'all be sure and let us know when these cakes are ready?? Maybe it can be served at our onliner Holiday get-together? Oh, we haven't planned that have we, haha. Maybe when Sean gets that pit ready .
