My mother used to make the Kraft fudge recipe. I didn't make fudge this year, but instead did make chocolate truffles. They are sooo easy. I was watching Fox 4 Good Day the Monday before Christmas and Chef Jake gave the recipe for chocolate truffles. Chef Jake is the chef from Lone Star Park. It was easy, but I had a little trouble with scooping the stuff up into balls with my melon baller as it stuck, but instead resorted to cuting it up with a knife and quickly rolling each piece by hand then into the nuts or powdered sugar. I suppose I should have dipped the melon baller into warm water each time to keep it from sticking. Still, it went very quickly and was very simple to make. When he made the recipe on TV, he added some sort of liquour (just a teaspoon or two for flavor), but I don't remember which one he used. I suppose you could use orange, or some sort of berry liquour or anything that would taste good with chocolate. This was in addition to the vanilla. I didn't use any and they tasted delicious.

Chocolate Truffles

2/3 Cup heavy (whipping) cream
12 ounces semisweet chocolate chips or finely chopped, high quality chocolate
1 Tablespoon butter, melted
2 Teaspoons vanilla
Cocoa powder, finely chopped nuts, toffee bits, raw sugar, toasted coconut, sugar mixed with cayenne, finely chopped candied orange peel or your choice of ingredients

Heat cream until it comes to a boil. Remove cream from the heat and immediately whisk in chocolate and butter until chocolate is melted. Whisk in vanilla. Transfer to a container and cool, then cover and refrigerate for at least 3 hours, or overnight. Using a melon baller, scoop out a small amount and roll in cocoa powder or your choice of coating. Place on a baking pan lined with parchment or wax paper and freeze 30 to 45 minutes or until firm. Transfer truffles to an airtight container. Refrigerate, covered until ready to serve. Makes 4 dozen small or 3 dozen large truffles.
