“We’ll see you in a black Expedition. Bring cash,” says James St. Peter to his almost 200 Facebook fans.

If you’ve read those words, you’re one of the lucky North Texans who have experienced Hypnotic Donuts.

You also will remember the anxiety St. Peter’s customers feel as they wait on Facebook on Thursday and Friday nights to see where his next drop-off location will be. It could be anywhere in Dallas and Collin counties, even Rockwall.

There’s the excitement and indecision that overwhelms you while choosing your order from the massive menu listed plainly on the Facebook profile. Then you e-mail your order, praying you’re one of the few customers St. Peter will choose, letting you into his obscure world of Hypnotic Donuts.

But not everyone enjoys having to track down a doughnut, especially when the quest doesn’t end with one in hand, St. Peter found.

So pushing aside his resistance to physical doughnut shops for the waste they produce, he will open a store front in Far North Dallas next month. But to operate the store without waste, customers will have to wait up to five minutes for their order.

“If you want the quality, it’s worth the wait,” he said.

The 37-year-old Plano native has been cooking up ideas for his doughnut business for two years. He experimented with countless recipes, visited local doughnut shops and Portland’s Voodoo Doughnut, made famous by Food Network for its unusual recipes.

Now, with recipes of his own, including the popular Lucy in the Sky with Lemons (a vanilla cake doughnut with lemon frosting, crushed up white chocolate and Lemonheads candy), the Far North Dallas resident is in his third month of business.

Lisa and Clint Harris of Far North Dallas stopped by St. Peter’s Expedition parked in a North Dallas Walgreens for their second Hypnotic experience on June 5. This time, they made sure to order enough so they wouldn’t have to share.

“They are unbelievable,” Lisa Harris said. “You can’t believe you’re actually eating a doughnut.”

The mission is passion before profits, which is why he and his wife only bake about 24 doughnuts a weekend, filling on average six people’s orders and rejecting 15-25 others.

Even the store front will only open from 7-10 a.m. on the weekends, operating out of The Pizza Guy on Preston Road.

“By limiting our days and hours we want to completely stay away from doing it as a job,” the Plano Senior High School graduate said. “We want to make this a doughnut experience.”

I've been there. yes, it's unique, but not worth 2.50 a donut unique. Not when anyone with a little creativity could do the same for a lot less. Plus he's only open Sat/Sun until he runs out.

Once the novelty wears off, I can't see how he'll survive.
