I am looking for a yummy dessert recipe that I can take to the lake this weekend! Any ideas?

Fruit salad is always a winner when I need a dessert for outdoors. I pick up grapes, strawberries, kiwi, plums, nectarines or peaches and any other summer fruit that sounds good. I slice it up in a big bowl, add about 1/4 cup sugar and squeeze the juice from one or two limes and mix it up. Everytime I take it to a party, everyone really loves it because it is so refreshing instead of something heavy like cake or pie.

Our church is having a contest for best dessert for our day at the lake. I make a great apple pastry but usually make it for Thanksgiving. I think of a yummy fruit salad like that as more of a side.

Apricot Nectar Cake is my favorite summertime cake. Here is one version of it: http://allrecipes.com/Recipe/Apricot-Nectar -Cake-I... It's very moist and fruity. If I will be taking it somewhere, I usually bake it in a 9x13 pan just because it's easier to transport. I think it tastes best when served cold, so you might want to keep it in a cooler until serving.

You can do a strawberry shortcake- which can be carried in separate containers and assembled just before you eat it.

It might be considered a side dish by some, but is a very refreshing ending to a summer meal, especially outside.
