I had one friend post chocolate pumpkin muffins on Facebook. Another brought spiced pumpkin muffins to our MOMS group at church. These are amazingly simple.

Preheat oven to 350.

Mix one 15oz can of pumpkin puree with one box of cake mix (spiced is lovely, devils food is fantastic). Pour into muffin pan. For normal muffins, bake 20-25 minutes. For mini-muffins, bake 15 minutes.
Crazy doesn't even begin to cover it.

Will work for shoes!

You can also mix in chocolate chips, white chocolate chips, raisins, or any other add in and drop them on a cookie sheet. Makes a great little cookie. YUM!

Great idea! I did mix chocolate chips into the chocolate muffins this morning.

So, I bought a can of pumpkin and a cake mix today. It is a carrot cake mix - thought it sounded good with the pumpkin. Anyway, I know you said just the pumpkin and cake mix, but how about an egg or two to help bind the mixture? I was wondering if these might be too crumbly without an egg.

I did both chocolate and spice without egg and they came out great. I was shocked! Let me know how the carrot comes out -- I bet it's yummy!

I sent the spiced ones to church for a funeral reception last week. My mom got to taste and loved them too!

Just got finished making the muffins with a spice cake mix. They turned out great and are delicious. I wonder how a little cream cheese frosting added to the top would be?

There is a series of cookbooks called "The Cake Doctor" that my sister has. I may need to look into some of those recipes. Thanks for sharing!

mspam3 - Cream cheese sounds really good. I'm going to make those muffins today or tomorrow with my carrot cake mix.

I have "The Cake Doctor" cookbook. I need to look through it again to see what good recipes I can find. We don't eat a lot of sweets, but it is nice to have them occasionally.

I finally made those muffins with the carrot cake mix and they were really good. I didn't add any icing or anything, but they were surprisingly moist and held together well.
