Ok, all you gourmet burger afficianados, here is a new spot for you to check out--Liberty Burger, located at Forest and Inwood in North Dallas. It's a small place and fills up quickly. If you go there for lunch, you'll want to get there before 11:30 or the line will be out the door.

These are not your average run of the mill burgers either. Several of my co-workers have made the comment that this was one of the best (if not THE best) burger they had ever eaten. So far, I've tried two of their specialties, the Baby Bella and South of the Burger. The Baby Bella is an 8 oz beef patty which is perfectly cooked (no pink, but still juicy and flavorful), topped with a large onion ring. In the center of the onion ring is a mixture of sauteed baby portobello mushrooms and queso blanco. The South of the Burger also starts with an 8 oz beef patty, which is topped with cheddar cheese, refried beans, avacado, pico de gallo and tortilla strips. If you prefer your burger with something other than beef, they also have turkey, lamb and veggie burgers.

Exactly what is that comment supposed to mean? I think you need to explain yourself because it sounds derogatory and disgusting.

He's referring to the "lean, finely textured beef", commonly known as pink slime, that has recently been in the news. It is frequently added to ground beef.

Clogger, pink slime is the term used for mass produced beef filler. It is what used to be the waste product of a cow such as skin, intestines, brains, etc. The "all beef" product is boiled down to a sludge, exposed to ammonia for bacteria resistance and then added to hamburger. It's the ammonia exposure that turns this sludge pink. The same process is used for McNuggets, McFish, etc. Here's an article on the subject. Fortunately, people are opening their eyes to this and there is pressure to remove it from the food chain. Schools have been feeding this garbage to children for years.

Thanks MissingChico and Starrlac for the explanation. I had never heard the term "pink slime". After reading the article, I certainly wouldn't think Liberty Burger has uses this product in their patties because their emphasis is on high quality.

Here's a quote from th Libery Burger website that pretty much sums up their mission statement:

Liberty Burger is family-owned and Texas-grown, and that’s how we operate. We not only strive to reinvent the all-American concept of the hamburger, but we pledge to bring you a restaurant that sets the bar high with our standards in food quality, social contribution and environmental responsibility. We continue to make the millions of choices and decisions that define a new brand with a modern, relevant and irresistible concept. Doing things right– sourcing the freshest and highest quality produce, finding a local bakery that uses only American grown ingredients, insuring that our meats come from responsible sources– is not the easiest way to run a restaurant, but it is the right way. And that’s what we are committed to doing.
